Easy home made mayonnaise – sugar free

Home made mayonnaise not only tastes better but is so much healthier.  Yes, it is pretty much a fat bomb, but when eaten in moderation it can definitely be incorporated in a healthy diet.  Our easy home made mayonnaise is quick to make and sugar free.  No need to pour the oil drop by drop into the egg mixture.  All you need is a stick blender and 2 minutes.  The mayo makes a yummy sweet potato salad and is delicious as a dip for our perfect roasted vegetables.

This home made mayonnaise is quick and easy to make and sugar free.

Ingredients
  • 1 egg (straight from fridge)
  • 1 cup light tasting olive oil / avocado oil / nut oil
  • juice of ½ lemon
  • salt
  • OPTIONAL
  • 1 tsp dijon mustard
  • 1 tbsp chopped roasted garlic
  • 1 tbsp chopped anchovy fillets
Directions
  • Step 1 Break egg into a tall narrow container or jar. Be careful not to break the egg yolk.
  • Step 2 Add the lemon juice, salt, garlic, anchovies and mustard. Be careful not to break the egg yolk.
  • Step 3 Slowly pour the cup of oil into the jar. You guessed it, be careful not to break the egg yolk.
  • Step 4 Insert a stick blender and push it all the way to the bottom of the jar, covering the egg yolk with the head of the stick blender.
  • Step 5 Push the power button and do not move the blender for 20 seconds.
  • Step 6 After 20 seconds slowly start raising the stick blender while moving it around until the mayo is thick and combined.
  • Step 7 Store in the fridge for a couple of days.
