Paleo banana bread – gluten, wheat, dairy and refined sugar free

I’ve been wanting to post a banana bread recipe on my blog for a while now.  There are so many recipes on the internet but this one is pretty special.  It’s perfectly sweet, moist and crunchy and quick and easy to make.  The whole family will love this one.

This perfectly sweet, moist and crunchy banana bread is gluten, wheat, dairy and refined sugar free.

Ingredients
  • 4 medium bananas
  • 4 eggs
  • ¼ cup honey or maple syrup (or sweetener of choice)
  • ½ cup nut butter
  • ¼ cup coconut oil, melted
  • ½ cup coconut flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • pinch of salt
  • 1 cup roasted nuts, roughly chopped (we used cashews)
Directions
  • Step 1 Preheat the oven to 180℃.
  • Step 2 In a food processor, combine the bananas, eggs, honey, coconut oil, vanilla and nut butter and process until fully combined.
  • Step 3 Add the dry ingredients (excluding the nuts) and mix well.
  • Step 4 Fold in the chopped nuts.
  • Step 5 Pour the batter into a large prepared or silicone loaf pan and spread evenly.
  • Step 6 Bake for 40 – 45 minutes or until golden brown. A toothpick inserted into the center should come out clean.
  • Step 7 Allow to cool a bit in the loaf pan, then flip onto a cooling rack to finish cooling completely.
  • Step 8 Store in and airtight container in the fridge for up to 5 days or the freezer for up to 3 months.
