Most kids love chicken nuggets. Conventional shop bought chicken nuggets are not exactly healthy and are loaded with grains, vegetable oils, stabilisers, preservatives and all sorts of foreign ingredients. Well, chicken nuggets can be healthy. All you need is good quality ingredients and a bit of time. We love using chicken thighs but breasts work just as fine.
Paleo chicken nuggets

These paleo chicken nuggets are deliciously crisp and gluten, wheat and diary free. 100% kids approved.
Ingredients
- 8 - 10 deboned chicken thighs or 2 -3 large chicken breasts
- 2 eggs
- ¼ cup coconut milk
- 1 cup ground almonds
- ¾ cup arrowroot powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 2 tbsp coconut oil or other good quality fat
- good quality or home made tomato sauce
Directions
- Step 1 Use a meat mallet to gently pound out the chicken so they are all about 2cm thick.
- Step 2 Cut the chicken into fingers.
- Step 3 In a bowl combine the eggs and coconut milk.
- Step 4 In another bowl combine the ground almonds, half of the arrowroot, garlic powder, onion powder and salt. Mix well.
- Step 5 Place the remaining arrowroot in a separate bowl.
- Step 6 Coat each individual piece of chicken in the arrowroot, shaking off any excess. Next dip each piece in the egg mixture and coat with the almond mixture.
- Step 7 Heat the oil in a large frying pan over medium heat.
- Step 8 Add the chicken nuggets in batches and cook for approximately 3 minutes a side or until cooked through.
- Step 9 Remove the nuggets from the pan and drain on paper towel.
- Step 10 Serve with good quality or home made tomato sauce.
