I got my hands on a bag of beautiful organic heirloom carrots and made a rustic veggie platter with home made roasted garlic and anchovy mayonnaise. This is the perfect side to a lazy summer braai (barbecue) or Sunday roast. I often serve this as an appetiser when we have people around for lunch or dinner. Even my daughter is a fan!
Roasted heirloom carrots with home made mayonnaise

Roasted heirloom carrots served with a yummy home made garlic and anchovy mayonnaise.
Ingredients
- 1 bunch or bag of heirloom carrots
- 1 tbsp olive or coconut oil
- seasoning of choice - we love using chimichurri salt or za'ataar blend
- home made mayonnaise
Directions
- Step 1 Preheat the oven to 180℃.
- Step 2 Place the peeled or unpeeled (your choice) carrots in a baking tray and drizzle with the oil.
- Step 3 Bake for 30 – 35 minutes or until cooked.
- Step 4 Cut the roasted carrots lengthways in half and arrange on a pretty plate.
- Step 5 Serve with home made mayonnaise.
