My daughter loves ginger biscuits. These raw ginger biscuit energy balls are gluten, dairy and refined sugar free and taste like ginger biscuit dough. Perfect for a lunch box treat or a pre-training snack.

Cinnamon has a naturally sweet taste and is a powerful spice that has been used medicinally around the world for thousands of years. A little bit of cinnamon goes a long way and as little as ½ a teaspoon of cinnamon daily can have a positive effect on blood sugar levels, digestion, immunity and more. Cinnamon is loaded with antioxidants and contains anti-inflammatory properties. It can lower blood sugar levels, reduce heart disease risk factors and has a plethora of other impressive health benefits.
Ginger biscuit energy balls - gluten, wheat and refined sugar free
These ginger biscuit dough energy balls are gluten, wheat and refined sugar free and 100% kids approved.
Ingredients
- ⅔ cups almond flour (for grain free) OR ⅓ cup almond flour and ⅓ cup oats
- ⅓ cup coconut flour
- 1 ½ tsp ground ginger
- 1 tsp ground cinnamon
- 4 medjool dates OR 2 tbsp maple syrup
- ⅓ cup nut butter (we used cashew nut butter)
- 1 tsp vanilla essence
- pinch of salt
Directions
- Step 1 Roughly chop the medjool dates and cover with hot water – set aside to soak.
- Step 2 In a blender, mix together the almond flour, oats (if using) coconut flour, ginger, cinnamon and salt. Blend until fine.
- Step 3 Add nut butter, vanilla, maples syrup (if using) and drained medjool dates.
- Step 4 Blend until completely combined and smooth.
- Step 5 Roll into balls between your hands. If the dough becomes sticky, wet your hands slightly.
- Step 6 Store balls layered with parchment paper in the freezer.
- Step 7 The balls are delicious when frozen and should ideally be kept cool if packed in lunch boxes.
