Healthy breakfast loaf – gluten, wheat, dairy and refined sugar free

Let’s be honest.  We all like a slice of freshly baked bread with our favourite topping for breakfast.  If you are excluding grains, dairy and sugar from you diet, it’s difficult to find or bake a decent replacement.  If you’ve ever tried baking grain free bread recipes, you’ll know that not all low carb, grain free bread recipes are equal.  Our healthy breakfast loaf is gluten, wheat, dairy and refined sugar free and is perfect for those with food intolerances.  The apple and honey gives it a slightly sweet taste.  Perfect to have for breakfast topped with your favourite nut butter.

This gluten, wheat, dairy and refined sugar free loaf is slightly sweet and perfect for breakfast or morning tea.

Ingredients
  • 1 cup almond flour
  • 1 cup tapioca flour
  • ¼ cup coconut flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup desiccated coconut
  • ¼ cup honey
  • 3 eggs
  • ⅓ cup coconut milk (you can use full fat yogurt or goat kefir if you don't need it to be dairy free)
  • ½ cup grated apple
  • ½ cup grated carrot
  • ½ cup coconut oil (melted)
  • ½ cup chopped nuts
Directions
  • Step 1 Preheat the oven to 180℃.
  • Step 2 Combine the dry ingredients in a bowl and mix well.
  • Step 3 In another bowl, whisk together the honey, eggs, coconut milk, apple and carrots.
  • Step 4 Add the melted coconut oil to the wet ingredients.
  • Step 5 Add the wet ingredients to the dry ingredients and mix well.
  • Step 6 Fold in the chopped nuts. The batter will be thick.
  • Step 7 Scoop the batter into a prepared or silicone loaf tray and smooth out the top with a spatula.
  • Step 8 Bake for 45 minutes or until golden brown.
  • Step 9 Remove from the oven and let it rest for at least 15 minutes before removing the loaf.
  • Step 10 Let is cool completely, slice and enjoy as it is or topped with you favourite nut butter.
  • Step 11 TIP: Cut the loaf into slices and store between layers of parchment paper in an airtight container in the freezer. Simply remove a slice and and when needed.
