There is nothing quite like the smell of freshly baked bread. These paleo bread rolls are naturally sweetened with apple juice and medjool dates. Its grain, gluten, wheat, nut, dairy and refined sugar free and super easy to make. The rolls are a little sweet and a perfect match for nut butter topped with fruit slices. Try these buns with a soft poached egg and crispy bacon. Of all the grain free bread rolls I’ve ever attempted, these are my daughter’s favourite by far. If you prefer less fructose, leave out the dates and only use the apple juice.
Sweet paleo bread rolls - grain, gluten, nut and sugar free
Grain, gluten, wheat, dairy, nut and refined sugar free bread rolls. Super easy and a hit with the whole family.
Ingredients
- 1 cup fresh apple juice (warmed)
- ½ cup full-fat coconut milk (warmed)
- 2 tbsp melted ghee
- 2 medjool dates chopped and covered with boiling water
- 2 eggs + 1 egg yolk
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar
- 2¾ cup tapioca flour
- 1 cup coconut flour
- 2 tsp baking soda
- ¼ tsp salt
Directions
- Step 1 Preheat the oven to 180℃
- Step 2 Whizz the date mixture into a paste with a hand held blender.
- Step 3 In a large bowl, combine the apple juice, coconut milk, ghee, date mixture, eggs, vanilla and apple cider vinegar.
- Step 4 In another bowl, combine the tapioca flour, coconut flour, baking soda and salt and mix well.
- Step 5 Add the wet ingredients to the dry ingredients and mix well with a whisk.
- Step 6 Let the mixture stand for a few minutes for the coconut flour to absorb the liquid. You should have a muffin or cup cake batter like consistency.
- Step 7 Scoop the batter into a prepared / silicone muffin tray. A miniature bread tray would also work well.
- Step 8 Bake for 40 minutes or until golden brown.
- Step 9 Always check that the rolls are baked all the way through by inserting a toothpick and see if it comes out clean with crumbly bits. If it comes out with slimy dough on the stick, it needs more time in the oven.
- Step 10 Remove from the oven and serve warm or cool on a cooling rack.
- Step 11 Store in an airtight container in the fridge for a couple of days or in the freezer for up to a month.
