I’m a huge avocado fan and have avo almost every day.  My guacamole is super easy, perfectly fresh and zesty and delicious. Its perfect with my savoury scones or almond parmesan cheese crackersa yummy topping for roast butternut slices or salmon and a great filling for an omelette.

Avocados are naturally nutrient dense and contains nearly 20 vitamins and minerals.  Avocados benefits include improved heart health, hormone balance and better digestive health to name a few.  Although most of the calories in an avocado come from fat, don’t shy away.  Avocados are full of healthy beneficial fats that help to keep you full and satiated.  Eating fat slows the breakdown of carbohydrates which helps to keep sugar levels in the blood stable.  Fat is essential for very single cell in the body.  Eating healthy fats supports skin health, enhances the absorption of fat-soluble vitamins, minerals and other nutrients and may even help boost the immune system.

Ingredients
  • 1 large avocado
  • 1 medium sized tomato
  • 1 small red onion
  • 1 tbsp freshly squeezed lemon juice
  • bunch of fresh coriander
  • salt and pepper
Directions
  • Step 1 In a bowl mash the avocado.
  • Step 2 Add finely chopped tomato and red onion.
  • Step 3 Add lemon juice, chopped coriander and season with salt and pepper.
  • Step 4 Serve immediately or store in an airtight container in the fridge for up to a day.
